Can I build a view to see pending and completed conversations?

Yes you can! You'll just need to create a view as normal, and select the following options: 

You can select whatever columns or sort order you like before saving it. 

NOTE: This view will not show 'Closed' conversations, which typically includes any conversation set to 'Complete' more than 5 days ago. Read more about the difference between complete and closed conversations.
